Professional Japanese Santoku knives are made of 3 layers of Japanese SKD-11 high carbon stainless steel. Hardness is up to 60±2 HRC; ensuring the Santoku chef knife has high durability, stain resistance and long-lasting cutting performance. The blade has a unique forged non-stick pattern; and is BO oxidized for enhanced rust and stick resistance, making food cuts as smooth as cutting butter.
